For every Finnish child of a certain age, whether growing up in Finland or in my case, in Canada, you undoubtedly wore a pair of huopasaappaat! Even now, when I close my eyes, I can still see myself, as a little girl, wearing my grey felt “huopasaappaat” as they’re called in Finnish, playing and traipsing through the winter snows for hours on end, as clear as it was yesterday! The memory has never faded, just like a kodak moment, it is stored with me forever


Spaghetti Squash with Lemon and Parsley

Preheat oven to 350 F. Cut spaghetti squash length wise and clean out the seeds.  Season with salt and pepper and place face down on a baking sheet lined with parchment paper. Bake for 40 to 45 minutes for a medium to large squash.  When you can puncture a sharp knife into the skin easily, the squash is done, if you prefer your squash to have a crunchier bite remove sooner.  Using a fork, pull away at the fibers and they will release like strings


Hibiscus Tea – Love it!

I first discovered this wonderful tea last year while I was in Mexico.  I enjoyed a beautiful glass of iced hibiscus tea on arrival to my hotel.  It was wonderfully refreshing with a lovely, slightly sweet taste to it.  In fact, I thought perhaps they had added sugar to the tea but it was simply the sweetness of the hibiscus – nothing added.  My tea had also been made from freshly picked hibiscus flowers, picked daily by the chef and steeped for all the guests

Greek Yogurt with Peanut Butter & Bananas

Great mid-afternoon snack or dessert! 1/2 cup plain Greek Yogurt Sweetner of choice – organic raw honey or stevia 1 Tbsp. organic unsweetened peanut butter 1/2 banana sliced Nuts of your choice for topping Mix yogurt, peanut butter and sweetner together. Top with sliced bananas and nuts.  (in this case – cashews and almonds) Enjoy!

Quinoa Salad with Roasted Peppers

Quinoa Salad with Roasted Peppers 1 cup of quinoa – Make sure to rinse the quinoa (I use a tight sieve and run water over it) as it takes the bitter coating off. 1 1/2 cups water or vegetable broth into a sauce pan. Bring water or broth to a boil, pour the quinoa in and mix and then turn the heat down to simmer, cover and cook for anywhere between 12 to 15/18 minutes.  You’ll know its done when you see no water at
