Spaghetti Squash with Lemon and Parsley

Preheat oven to 350 F. Cut spaghetti squash length wise and clean out the seeds.  Season with salt and pepper and place face down on a baking sheet lined with parchment paper. Bake for 40 to 45 minutes for a medium to large squash.  When you can puncture a sharp knife into the skin easily, the squash is done, if you prefer your squash to have a crunchier bite remove sooner.  Using a fork, pull away at the fibers and they will release like strings

Hibiscus Tea – Love it!

Greek Yogurt with Peanut Butter & Bananas

Great mid-afternoon snack or dessert! 1/2 cup plain Greek Yogurt Sweetner of choice – organic raw honey or stevia 1 Tbsp. organic unsweetened peanut butter 1/2 banana sliced Nuts of your choice for topping Mix yogurt, peanut butter and sweetner together. Quinoa Salad with Roasted Peppers 1 cup of quinoa – Make sure to rinse the quinoa (I use a tight sieve and run water over it) as it takes the bitter coating off. 1 1/2 cups water or vegetable broth into a sauce pan.
